We start with the bean . . .

CHOX are artisanal chocolates, handmade in small batches. As one of only a handful of "bean to bonbon" chocolatiers in California, we believe that CHOX bring exquisite new sensations to even the most jaded of tastebuds.

We start with Free Trade, organic, Trinitario cacao beans from Costa Rica, which impart a smooth, low-acid, medium chocolate flavor with nuances of caramel and raisin.  We roast, grind, refine and conch the beans to the acme of perfection.  CHOX dark chocolate has a 65% cacao content; our milk chocolate pairs a 43% cacao content with a 50/50 blend of sugar and whole milk powder; our white chocolate is created without the overbearing sugar content in most white chocolate.

Next, we add fresh heavy cream and butter, and any of a variety of natural fruit purees, nuts, fresh herbs and spices to create elegant, creamy ganaches and caramels that dance on your palate.  First, allow them to entice your eyes -- click here for our current chocolate offerings.

Some tastebuds dance to the beat of a different drummer. For those, CHOX is proud to introduce our Lattes: these non-chocolate confections and bars are created from our own, unique, couverture made from coffee beans – it has the consistency and texture of chocolate, but with the flavor of coffee. (Couverture normally refers to fine chocolate coating containing at least 30% cocoa butter for smoothness; our coffee bean couverture has the same properties.) Click here to see the CHOX Lattes.
